There's Something About Morocco

I didn’t think I would like the food in Morocco. It’s not usually what I like to eat I thought but since going there a few times, I’ve realized, it is what I like!! I just didn’t know what it really was.

The tangines are varied and offer lots of fresh vegetables, the salads are simple but delicious, and the mint tea is a custom I could get used to very easily. I love the ritual of it and the taste.

Here is a recipe I’ve made several times (so easy!) and I think you will enjoy it to.

MOROCCAN TOMATO SALAD

  • Ingredients:
    1 large yellow onion
    6 large ripe tomatoes seeded and finely chopped
    1 english cucumber peeled and finely chopped
    1 red bell pepper seeded and finely chopped
    3 TAB olive oil
    3 TAB chopped parsley
    3 TAB chopped chives
    1 TAB lemon juice
    Kosher salt and pepper to taste

  • Instructions:
    In a bowl combine all ingredients together and keep in fridge until ready to serve
    Best served within 3 hours of making
